RHUBARB PIE 
3 c. cut rhubarb
2 c. sugar
1 tbsp. lemon juice
2 eggs
Pinch salt
3 slices bread
Unbaked 10" pie crust

CRUMBLE TOP:

1 c. quick cooking oats
1 c. flour
2 c. brown sugar
1 c. butter

Soften bread under water faucet, not too much. Mix with sugar and eggs and then rhubarb, pour into unbaked pie crust. Mix together crumble topping and sprinkle on top (enough for 3 pies). Bake at 350 degrees for about 1 hour.
