FLOUR TORTILLAS | |
3 1/4 c. flour (white or whole wheat) 1 tbsp. baking powder 1 tsp. salt 1/4 c. shortening (lard or Crisco) 1 1/2 c. lukewarm water (approximately) Add the baking powder and salt to the flour. Work in the shortening with your hands and add the water gradually (like making a pie dough). Knead until smooth. Now make into balls the size of walnuts. Make larger if you want larger tortillas. GREASE these balls slightly and let rest 10 minutes. Roll out paper thin (between wax paper). You may use a little flour. Heat these until they bubble on a dry griddle or Teflon skillet. You can freeze them to use later also. When ready to use, slightly butter both sides and crisp up on a griddle or skillet. These are great for cheese crisps or tostados. Also very good after crisping with sugar and cinnamon sprinkled on them. |
