SPINACH FANDANGO 
1 lb. ground beef
1 med. onion, chopped
1 (6-8 oz.) can mushrooms, drained
1-2 cloves garlic, chopped, powder
1 tsp. oregano
1/4 c. oil
Salt & pepper to taste
2 (10-12 oz.) pkgs. frozen chopped spinach
1 can cream of celery soup
1 c. sour cream
Monterey Jack cheese

In skillet combine meat, onion, mushrooms, garlic and oregano and brown in oil. Salt and pepper to taste. Place spinach unthawed on top of other ingredients. Cover and let steam until mixable. In medium casserole bowl mix semi cooked ingredients with cream of celery soup and sour cream. Cut cheese in strips and lay over top. Bake uncovered in 350 degree oven for 15 to 20 minutes.
