SHOESTRING SALAD 
6 oz. can tuna (substitute chicken or turkey)
1 c. carrots, shredded
1 c. celery, cut in sm. pieces
1/4 c. onion, diced
7 oz. can shoestring potatoes
Mayonnaise
Salt & pepper

Dice and cut up carrots, celery and onion; mix together and refrigerate overnight. Next day mix in tuna, then salt and pepper. Just before serving mix together shoestring potatoes and mayonnaise (just enough to moisten) with all other ingredients. Serve.
