SHERRIED CREAM OF CAULIFLOWER
SOUP
 
Cook until limp:

1 onion, sliced

In:

2 tbsp. butter

Add:

2 (14 oz.) cans chicken broth

Bring to boil and add:

2 carrots, sliced
1 med. head of cauliflower

Simmer 15 minutes. Blend until smooth.

Add:

1 c. Half and Half
1/8 tsp. nutmeg
1 tbsp. sherry (dry)
Salt and pepper to taste

4 servings.
