FLORENTINE FILLETS 
1 (10 oz.) pkg. frozen spinach souffle, thawed
1/4 c. thinly sliced green onion
1/8 tsp. garlic powder
4 sole or flounder fillets, about 1 lb.
Lemon juice

Heat oven to 350 degrees. Combine spinach souffle, green onion, and garlic powder. Spread spinach mixture over each fillet. Sprinkle with lemon juice. From the narrow end, roll each fillet (jelly-roll fashion), and secure with toothpicks.
