6 lg. yams
1/3 stick of butter
1/3 c. sugar
Juice of 1 orange & also some grated orange rind

Steam or boil 6 large yams until soft. Peel, mash and add butter, sugar, juice of orange and some rind. Beat until fluffy. Pour in casserole and bake on moderate oven for 30 minutes. If desired, top with small marshmallows and brown lightly.
