CHOCOLATE OR BUTTERSCOTCH
COOKIES
 
2 c. graham cracker crumbs
1 box powdered sugar
1 c. flake coconut
1 c. peanut butter
1 tsp. vanilla
2 sticks butter, melted
1 (6 oz.) pkg. chocolate or butterscotch chips (semi-sweet)
1/2 or more bar paraffin

Mix dry ingredients well; add peanut butter and MIX WELL; add vanilla and butter and mix well. Shape into balls (about the size of a walnut) or into flat cookies.

In top of double boiler, melt paraffin and chips. MIX WELL. Dip cookies into mixture using two forks. Let dry on wax paper, and dip again. Can be made ahead and frozen in a cookie tin.
