FRESH APPLE CAKE 
3 tbsp. shortening
1 c. sugar
1 egg
1 tsp. vanilla
3 c. pared, diced apples (firm apples that don't mush)
1 c. flour
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/2 c. chopped nuts

Cream shortening and gradually add sugar. Add egg and vanilla. Beat well. Mix in apples. Sift together flour, soda, salt and spices; blend into batter. Stir in nuts. Turn into ungreased 8 or 9-inch square pan. Bake at 350 degrees for 40-45 minutes or until done.
