GLAZED APPLE GEMS 
1/2 c. (1 stick) unsalted butter, at room temperature
1 1/3 c. firmly packed brown sugar
1 egg
1 lg. apple, peeled, cored and finely chopped
1 c. raisins, finely chopped
1 c. walnuts, finely chopped
1/4 c. apple juice
1 tsp. finely grated lemon peel
2 c. unbleached and all-purpose flour
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. nutmeg

Preheat oven to 375 degrees. Cream butter with sugar in large bowl until light and fluffy. Stir in egg, apple, raisins, nuts, apple juice and lemon peel. Blend in flour, baking soda, cinnamon and nutmeg; mix well. Drop by tablespoon. Bake 10-12 minutes.

GLAZE:

1 1/2 c. powdered sugar
1 tbsp. butter
3 tbsp. apple juice
