SHEPHERD'S PIE 
3 tbsp. diced onion
3 tbsp. diced green pepper
2 tbsp. butter
1 c. ground beef
1/4 tsp. salt
1 c. beef soup with vegetables
1 c. mashed potatoes
Grated cheese

Cook the onion and green pepper in butter in a skillet until tender. Add the beef and cook until done. Sprinkle on salt, add soup; mix and simmer 5 minutes. Place in a casserole and top with mashed potatoes. Bake at 400 degrees for 20 minutes. Cover with cheese and bake again until cheese is melted. Serves 4.
