UPSIDE DOWN MEAT PIE 
1 tbsp. shortening
1 lb. ground beef
1 can (8 oz.) tomato sauce
1 1/2 tsp. chili powder
1 green pepper
1/2 c. onion, finely chopped
1 tsp. salt
1/4 tsp. pepper
1 recipe cornbread

Melt shortening in 10 inch skillet; add onion and ground beef and brown lightly. Add tomato sauce, salt, chili powder, and pepper; mix thoroughly; simmer while preparing cornbread batter. Slice green pepper into 7 rings. Turn meat out of skillet; place pepper rings around edge of skillet with one in the middle. Spoon meat back over rings; pour cornbread batter over meat.

Bake at 425°F for 20 to 25 minutes.

Makes 6 servings.
