FETTUCCINE WITH HAM AND MUSHROOM
SAUCE
 
1/4 c. butter
1/2 lb. mushrooms, sliced or 1 can (8 oz.) sliced mushrooms, drained
1 med. onion, drained
1 med. onion, chopped
1 lb. cooked ham, diced
1 recipe white sauce base (recipe follows)
1/4 c. milk
1/4 c. grated Parmesan cheese
8 oz. fettucini noodles, cooked and drained
1 tbsp. chopped parsley, optional

In large skillet melt butter; add mushrooms and onion. Cook 5 minutes or until tender. Add ham; mix well. Prepare white sauce base using 1/4 cup additional milk. Stir in Parmesan cheese. Pour sauce over ham mixture; heat until bubbly. Serve over hot noodles. Garnish with parsley and additional grated Parmesan cheese, if desired.
