GERMAN POTATO SALAD
6 med. potatoes, sliced 1 med. cucumber 1 sm. or med. onion 1/2 c. oil 1/2 c. vinegar Salt and pepper Boil potatoes and let cool. Add cucumber, thinly sliced, diced onion, oil and vinegar. Mix well.

This is exactly the way my German mother in law made her potato salad, simple but such a crisp and clean flavor. This should not be confused with the authentic style of German Potato Salad with the cooked dressing and bacon, that is a completely different recipe. This is a refreshing break from the heavy, mayo laden salads we get served all summer. You could also substitute green onions for the white and garnish with some dill weed.
