SPEEDY (MEATLOAF) MEATBALLS | |
2 lbs. ground beef 1/4 c. catsup 1/2 med. onion, chopped 1/3 c. bread/cracker crumbs 3 tsp. Worcestershire sauce A dash of salt and pepper 2 eggs SAUCE: 3 beef bouillon cubes 3 c. boiling water 3 tbsp. cornstarch 1/2 med. onion (chopped) 1/2 to 3/4 c. sliced mushrooms 2 tbsp. Worcestershire sauce 2 tbsp. butter In a bowl mix all of the ingredients together to make the meatballs. Form meatballs and place each one in an individual section in a muffin tin. (Spray muffin tin with Pam before filling the sections.) Place in a preheated oven at 350 degrees for 15 to 20 minutes. Prepare the sauce while your meatballs are cooking. Place 3 beef bouillon cubes in 3 cups boiling water. After the cubes have dissolved add cornstarch over low heat and stir continuously. (If the sauce doesn't thick add small quantities of cornstarch until satisfactory.) Soften onions and mushrooms in a fry pan with butter on medium/low heat. Combine all ingredients for the sauce. Add Worcestershire sauce. Place the meatballs in a serving dish and pour the sauce over them. Delicious! |
