SUNFLOWER COOKIES 
1 c. butter
1 c. granulated sugar
1 c. packed brown sugar
2 eggs
1 tsp. vanilla
2 c. all purpose flour
1 tsp. baking soda
1/2 tsp. baking powder
1/4 tsp. salt
2 c. old fashioned or quick cooking rolled oats
1 c. flaked coconut
1 c. sunflower seeds (roasted, salted or unsalted)

In medium mixing bowl, combine the butter, granulated sugar and brown sugar and beat until well blended. Add the eggs and vanilla. Stir together the flour, soda, baking powder and salt; add to butter mixture.

Stir in the oatmeal, coconut and sunflower seeds. Drop by rounded tablespoon onto ungreased baking sheets. (Cookies spread, so leave plenty of space.)

Bake at 350 degrees for 8 to 10 minutes or until cookies are golden brown around the edges. Remove from baking sheets. Cool. Makes about 4 dozen cookies.

VARIATIONS: Substitute chocolate chips or raisins for the coconut.
