DADDY'S CORN BREAD 
3/4 c. plus 2 tbsp. plain cornmeal
1/4 c. plain flour
1/4 c. sugar
1/2 tsp. baking powder
1/2 tsp. baking soda
3/4 tsp. salt
1 egg
4 tbsp. cooking oil
1 1/2 c. buttermilk

Preheat oven to 400 degrees. Mix 3/4 cup cornmeal, flour, sugar, baking powder, baking soda and salt together. Beat egg with buttermilk. Add dry ingredients.

Cook in an iron skillet, pour in oil and sprinkle about 2 tablespoons of meal in. Heat skillet in oven and then pour grease from skillet into mixture. Stir and pour mixture back into skillet. Bake for 25 to 30 minutes or until brown. Makes 6 to 8 servings.
