DRESSING FOR POTATO SALAD, BEAN
AND PEA SALAD
 
3 eggs, well beaten
1 tbsp. prepared mustard
3 tbsp. flour, heaping
1/2 c. vinegar
1 1/4 c. sugar
1/8 tsp. salt
1 c. mayonnaise

With electric mixer beat eggs well. Add remaining ingredients except mayonnaise, beating 2 minutes until mixture is smooth. Cook in microwave on high 3-5 minutes; stir every minute or so to keep mixture smooth. Cool. Add mayonnaise and blend in well. Keeps in refrigerator for 2-3 weeks.

Since microwave ovens vary in power, you may need to adjust your cooking time.
