SHRIMP PATE 
1 3/4 c. cooked minced shrimp
1/8 tsp. tarragon (crumbled into powder)
1 tbsp. olive oil
1 tsp. lemon juice
1 tbsp. grated onion
1 tbsp. sherry
1/4 c. mayonnaise

Place all ingredients in a blender and beat until smooth. Or, mash shrimp with the back of a wooden spoon until paste like. Then beat in remaining ingredients and continue working until all is smooth and thoroughly blended. Serve with baby rye rounds or onion crackers.
