SKILLET LASAGNA (LITE) | |
10 oz. ground turkey or round 1/2 c. onions, finely chopped 1/4 c. water 1 1/2 c. part-skim Ricotta cheese 3 oz. uncooked lasagna noodles 1 c. canned tomato sauce 1 c. canned chopped tomatoes 1/2 tsp. each salt, pepper, and parsley 1 tsp. oregano 2 tbsp. + 2 tsp. grated Parmesan In a large non-stick skillet, saute meat and onions. Remove from heat. In small bowl, mix Ricotta cheese and 1 1/2 tablespoons Parmesan cheese, dash salt, and pepper. Spread evenly over ground meat mixture. Evenly distribute uncooked noodles on top of cheese. In a small bowl, mix tomatoes with spices and water and pour over noodles. Cover tightly and return to heat. Simmer on medium heat for 20-25 minutes. Sprinkle top with 1/2 tablespoon Parmesan cheese. Makes 4 LARGE servings. |
