OUR FAVORITE QUICHE | |
1 c. flour 1/2 tsp. salt 1/8 tsp. baking powder 1/3 c. shortening 4 - 5 tbsp. ice water 6 slices bacon, cut in matchstick pieces 1 c. sliced sweet onion 1 c. shredded Swiss cheese 5 eggs, beaten 1/2 tsp. salt Dash of nutmeg 1 scant tbsp. flour 1 c. whipping cream 1/4 c. milk For pastry, sift together flour, salt, baking powder. Cut in shortening to crumb stage. Sprinkle with ice water; with fork, form into a ball. Roll to fit pie tin. Put in and crimp edges. Fit with a piece of aluminum foil to cover bottom and sides. Pour in 1/2 cup dried beans or lentils. Bake 10 minutes in 400 degree oven. Remove beans and foil. Set aside. Saute matchsticks bacon until crisp. Drain on paper towel. Cook sliced onions in bacon fat until translucent. Remove to paper towel. Layer onions, cheese and bacon in partially cooked pie shell. Beat together a custard of eggs, salt, nutmeg, flour, cream and milk. Pour over assembled quiche. Bake at 350 degrees for 35 to 40 minutes. Remove from oven and let set 5 minutes before cutting. Serves 4 to 6. |
