OVEN POPOVER WITH SAUTEED APPLES 
3 lg. apples
1/4 c. plus 1 tbsp. butter
1/2 tsp. cinnamon
2 eggs
1/2 c. milk
1/2 c. all-purpose flour
1/4 tsp. salt

1. Core and peel apples. Slice into rings.

2. Melt 1/4 cup of the butter in a skillet. Saute apples and cinnamon until apples are golden brown. Set aside.

3. Beat eggs with milk, flour and salt.

4. Melt remaining butter in 9 inch cast iron skillet until sizzling. Swirl to coat. Immediately pour in batter.

5. Bake at 400 degrees for 20 minutes or until popover is puffed, golden and firm.

6. Gently heat apples through. Arrange in center of popover. Serve immediately. Makes nice brunch entree.

Tips: Center of popover can be filled with small link sausages instead of fruit, if you wish. Makes 4 servings.
