MAUREEN'S CHICKEN 
4 boned and split chicken breasts, skinless
1/2 c. butter
1 clove minced garlic
1 med. chopped onion
1 c. dry bread crumbs
1/2 c. finely grated Cheddar cheese
1/4 c. grated Parmesan cheese
Salt and pepper

Saute garlic and onion in butter until very soft. Strain butter into a bowl large enough to hold the breasts. Mix together bread crumbs, cheeses, salt and pepper. Dip breasts in butter and coat with crumb cheese mixture. Roll breaded breast and place in shallow ungreased baking pan. Bake at 350 degrees for 45 minutes uncovered.
