LEMON CUSTARD 
2 c. pear or apple juice
2 c. natural lemonade
2 bars agar-agar (or 3 tbsp. agar flakes)
Pinch of seal salt
1 tsp. vanilla
1 c. lemon non-dairy frozen dessert
1 pt. berries (raspberries, strawberries, or blueberries) (optional)

Combine juice and lemonade in a saucepan. Rinse agar bars; tear into 1 inch pieces and add to saucepan (or measure flakes and sprinkle on juice). Stir until agar softens. Bring mixture to a light boil; lower heat and simmer for 10 minutes until agar dissolves. Add salt and vanilla. Add frozen dessert; stir to dissolve and pour into shallow, heat-proof dish. Place dish in refrigerator for 30 minutes until custard is set. Serve as is or with berries. Serves 6.

Variation: For extra creaminess, place chilled custard in a blender and whip for 30 seconds immediately before serving.
