GERMAN POTATO SALAD 
1 lb. bacon (and grease)
5 lbs. potatoes
2/3 c. flour
2 c. sugar
4 c. water
1 c. vinegar
Salt
Pepper
Scallions

Fry out bacon, saving grease. Cook potatoes by boiling or baking the day before. In bacon grease add flour and water slowly. Add sugar and vinegar. Bring to a boil and allow to boil a few minutes, stirring constantly. Pour on potatoes. Add cut up scallions. Stir and cool.
