DANISH PANCAKES 
2 qts. whole milk (2%, 1%, skim don't work as well)
1 c. flour
1/2 tsp. salt
1 tbsp. sugar
1/2 tsp. baking powder
6 eggs, separated

Beat egg whites stiff. Mix all ingredients until smooth. Fold in egg whites. Pour some batter into hot slightly greased frying pan. Rotate pan to spread batter all over pan. Pour out extra (like making a crepe). Fry just a few minutes.

Serve with jelly, sugar or syrup. Also good used cold chicken salad, ham salad sandwiches.
