BAKED FISH MOZZARELLA 
2 lb. thick flounder or sole fillets
1 c. shredded mozzarella cheese
1 lg. tomato, thinly sliced
1/2 tsp. dried oregano
1/2 tsp. granulated garlic
1/2 tsp. salt
1/2 tsp. pepper

Preheat oven to 375 degrees. Butter large baking dish. Rinse fillets with water and pat dry. Arrange in single layer in a pyrex dish. Sprinkle with cheese and layer with tomato. Dust with oregano, garlic, salt and pepper to taste. Bake until fish is opaque, about 10 minutes. Transfer to heated platter and serve. Makes 6 servings.
