ISLAND GRILLED CHICKEN 
2 1/2 lb. whole chicken (butterflied)
4 cloves garlic, crushed
1/2 tsp. oregano
1/2 tsp. cumin
1 packet Sazon Goya con cilantro y achiote (found at Pathmark)
1/2 tsp. white pepper
2 tsp. fresh minced coriander
1/2 tsp. red pepper
1 tbsp. olive oil

Flatten chicken. Combine remaining ingredients, mix well and rub into both sides of chicken, generously. Put chicken skin side down, flat on broiler pan. Broil 10 to 15 minutes. Turn, broil 10 to 15 minutes. Serves 3.
