ISLAND CHICKEN | |
1/2 tsp. salt 1/2 tsp. seasoning salt 1/2 tsp. garlic salt 1/2 tsp. ground nutmeg 1 skinned, cut-up fryer 3 tbsp. Tamari light soy sauce 1/2 c. pineapple juice 12 oz. can pineapple chunks in own juice 1 green pepper, sliced & seeded 1 sm. sliced onion Mix the 3 salts and nutmeg. Place the seasonings in a bag and add the chicken parts. Toss to coat. Spray a saute pan with cooking oil. Brown the chicken on all sides. While chicken browns, drain the pineapple reserving the juice. Add water, if needed to make the 1/2 cup of juice. When the chicken is browned, add the soy sauce and juice. Stir gently. Add the green pepper, onion and pineapple chunks. Cover and occasionally stir. Simmer at low heat 25 to 30 minutes. Turn chicken after 10 minutes. |
