TOMATOES PIQUANT | |
6 to 8 ripe tomatoes 2/3 c. salad oil 1/4 c. tarragon vinegar 1/4 c. snipped parsley 1/4 c. sliced green onions 1/2 tsp. dried thyme or 2 tsp. snipped fresh thyme 1 tsp. salt 1/4 tsp. freshly ground pepper 1 clove garlic, minced Remove skins from tomatoes by placing them, one at a time, in boiling water to cover for about 30 to 35 seconds. (The skin will peel off easily.) Slice the tomatoes about 1/2-inch thick. Place tomatoes in a deep bowl. In a jar, combine the remaining ingredients. Shake well and pour dressing over the tomatoes. Cover and chill about 5 or 6 hours, spooning dressing over the tomatoes occasionally. At serving time, drain off dressing and snip more parsley over tomatoes for garnish. Sliced cucumbers are good with the tomatoes. Serves 6. Must do ahead. |
