PASSOVER SPICE CAKE 
6 eggs, separated
3/4 c. sugar
1 tsp. ground cinnamon
1 tsp. ground ginger
1/2 tsp. ground cloves
1/2 c. sifted potato starch
2 tbsp. matzo meal

Place egg yolks in a mixing bowl. Sift sugar, spices together and add to the yolk. Beat until light and thick. Stir together the potato starch and matzo meal and blend lightly into the batter. Beat egg whites until stiff but not dry. Fold batter into the whites. Pour into a greased 8 x 8 x 2 inch pan. Bake at 325 degrees for 40 minutes.
