HUDSON CHICKEN PICCATA 
Prep. Time: 15 minutes. Cook Time: 10 minutes. 4 servings.

1 pkg. Hudson fillets, boneless skinless breast (4 fillets)
1/3 c. all purpose flour
1 tsp. salt
1/4 tsp. ground black pepper
3 tbsp. butter
1/4 c. lemon juice

1. Unfold fillets and place, one at a time, between 2 sheets of wax paper; pound with a flat surfaced mallet until about 1/4 inch thick. Combine flour, salt and pepper; coat breast fillets with mixture.

2. Melt butter in large skillet over medium heat. Add chicken; cook 3 to 4 minutes per side until done. When done, fillet will not be pink when sliced through thickest part. Remove fillets to warm serving platter.

3. Add lemon juice to pan drippings. Cook until heated and slightly thickened. Serve lemon sauce with chicken.
