SHRIMP QUICHE | |
3/4 lb. cooked shrimp 1 c. sliced fresh mushrooms 1/4 c. chopped green onions and tops 1/4 c. melted butter 4 eggs, well beaten 1 1/2 c. half and half or light cream 1 tsp. salt 1/8 tsp. dry mustard 1/8 tsp. nutmeg 1 c. shredded Mozzarella cheese 1 unbaked 9 inch pie shell Chop shrimp. In small saucepan, cook mushrooms and green onions in butter until tender. In large bowl, combine eggs, half and half, salt, dry mustard, nutmeg and cheese. Fold in shrimp. Pour mixture into pie shell. Bake at 400 degrees for 15 minutes. Reduce heat to 300 degrees and continue to bake for 30 minutes or until knife, when inserted in the center of quiche, comes out clean. Let stand 5 minutes before serving. Makes 6 servings. |
