SEAFOOD CHOWDER | |
1/4 c. finely cut bacon or salt pork 1/4 c. minced onion 1 pt. shucked fresh clams with liquor or 2 (7 oz.) cans minced or whole clams, lobster or other sea food 2 c. finely diced raw potatoes 1/2 c. water 2 c. milk 1 tsp. salt 1/8 tsp. pepper Saute bacon and onion in large kettle. Drain sea food; add liquor, potatoes and water to onion and bacon. Cook until potatoes are tender, 10 minutes. Just before serving, add sea food, milk, salt and pepper. Heat to boiling, stirring occasionally. Serve immediately. Yield: 6 servings. NOTE: Butter may be used in place of bacon or salt pork. |
