DAD'S PERFECT WHITE BREAD 
1 pkg. yeast
1/4 c. warm water
2 c. scalded milk
2 tbsp. sugar
2 tsp. salt
1 tbsp. shortening
6 to 6 1/4 c. flour

Soften yeast in warm water. combine milk, sugar, salt and shortening. Cool to lukewarm. Stir in 2 cups flour. Beat well. Add yeast, stir. Add flour until manageable. Knead 8 to 10 minutes. Put into a greased bowl, cover and let rise 1 1/2 hours. Punch down, let rise 45 minutes. Cut into two loaves, put into greased loaf pans. Let rest (covered) 1 hour. Bake at 400 degrees for 35 minutes.
