OATMEAL QUICK BREAD 
1 1/4 c. unsifted flour
1 c. unsifted whole wheat flour
1 c. quick or regular oatmeal (uncooked)
1/3 c. firmly packed light brown sugar
1 tbsp. baking powder
1 tbsp. cinnamon
1/2 tsp. salt
1/2 tsp. nutmeg
1 1/2 c. skim milk
4 egg whites
2 tbsp. safflower oil
2 tsp. vanilla extract

Preheat oven to 300 degrees. Oil and flour 9"x5"x3" pan.

Combine flours, oats, sugar, baking powder, cinnamon, nutmeg and salt; set aside.

In a large bowl combine milk, egg whites, safflower oil, and vanilla. Gradually stir flour mixture into egg mixture. Mix only until dry ingredients are moistened.

Pour into prepared pan. Bake until tester inserted in the center comes out clean, about 40 minutes. Cool for 5 minutes. Invert onto a wire rack. Cool completely. Makes about 12 servings.
