ITALIAN CHICKEN AND RICE 
1 1/2 c. water
1 c. rice (raw)
1 (14 1/2 oz.) can tomatoes
1/2 lb. Velveeta cheese
1/4 c. chopped onion
1 1/2 tsp. Italian seasoning, divided
1 broiler fryer, cut up
2/3 c. Parmesan cheese

Preheat oven to 375 degrees. Stir together water, rice, tomatoes, cheese, onion and 1 teaspoon Italian seasoning. Pour in a greased 13 x 9 inch baking dish. Top with chicken, sprinkle with Parmesan cheese and remaining Italian seasoning. Bake 45-60 minutes or until chicken is tender. Let set 5 minutes.
