BANANA BRAN MUFFINS 
1 cup sifted all-purpose flour
3 tbsp. sugar
2 1/2 tsp. baking powder
1/2 tsp. salt
1 cup whole bran
1 well beaten egg
1 cup mashed ripe bananas
1/4 cup milk
2 tbsp. salad oil or melted shortening

Sift together flour, sugar, baking powder and salt. Stir in bran. Mix remaining ingredients. Add all at once to flour mixture, stirring just to moisten. Fill greased muffin pans 2/3 full.

Bake at 400°F for 20 to 25 minutes.

Makes about 10 muffins.
