FLOUR DESSERT 
9 oz. plain flour
3-5 egg yolks
A little salt
1 slightly heaped tbsp. sugar
1 packet Vanillin sugar (from Japanese or Deli stores)
3/4 pt. & 5 tbsp. milk
3-5 egg whites
2 1/2 oz. butter for frying
A little sugar for sprinkling

Sift the flour into a bowl and make a well in the middle. Beat the egg yolks with a little of the milk, salt, sugar and Vanillin sugar and pour the mixture into the well. Starting from the middle, blend the yolk mixture and the flour. Gradually add the milk, taking care to avoid lumps. Whisk the egg whites until stiff and fold carefully into the mixture.

Heat the fat in a frying pan and pour in about 3/8 inch of the batter. Fry until the underside is light yellow then tear into small pieces with 2 forks. Brown the pieces well, turning frequently. Repeat until the batter is used up. Serve sprinkled with sugar. Time: About 5 minutes.
