RHUBARB MERINGUE PIE | |
2 c. raw cubed rhubarb 1 c. sugar 2-3 egg yolks 1 tbsp. flour, moistened with a little water 1 tbsp. butter Pinch of salt Cook rhubarb until soft - add egg yolks, sugar, flour, butter and salt. Cook and pour into baked pie shell. Make meringue of 2-3 egg whites and 1 tablespoon sugar. Spread on pie and brown in moderate oven. Time, indeed, is a sacred gift, and each day is a little life. |
