SHANAKOPITA 
2 (10 oz.) pkg. frozen chopped spinach, cooked & drained well
1/4 lb. Greek Feta cheese, crumbled
8 oz. sm. curd cottage cheese
3 tbsp. chopped fresh parsley
4-6 green onions, chopped
6 eggs, beaten
1 1/2 cubes butter, melted
1 box filo pastry dough

Saute green onions in 2 tablespoons butter. In a large bowl mix well spinach, feta cheese, cottage cheese, parsley, sauteed green onions and eggs.

In a 9 x 13 inch pyrex baking dish layer with 10 sheets of filo pastry, buttering each sheet with melted butter. Add all of spinach mixture and spread evenly in baking dish. Layer 10 additional sheets of filo on top of spinach mixture, buttering each sheet. Bake at 350 degrees for 30-45 minutes or until golden brown.
