RUSSIAN ZAPEKANKA 
1 lb. wide noodles or spaghetti
1 lb. ricotta cheese
8 oz. sour cream
4 eggs
4 tbsp. sugar
2 tbsp. butter
2 lg. apples, finely chopped
1/2 c. raisins
1/4 c. nuts
1/2 tsp. cinnamon

FOR CALORIE COUNTING PEOPLE, I SUBSTITUTE:

1/2 lb. spaghetti
1 lb. light or fat free ricotta
8 oz. fat free plain yogurt
1 egg
3 tbsp. sugar or other sweetener
No butter
3 lg. apples, chopped
1/2 c. golden raisins
No nuts
1/2 tsp. cinnamon

Cook noodles and drain. Add other ingredients. Pour into well-greased (I use oven safe glass pan which does not need greasing) pan. Bake 1 hour (for glass pan, 40-45 minutes) at 350 degrees (for glass pan, 300 to 320 degrees). Cut into squares before serving.

To make a dessert, cool it and serve with heavy whipped cream. (I use sugar free applesauce.)
