CHICKEN SALAD 
5 c. cooked chicken
2 tbsp. salad oil
2 tbsp. orange juice
2 tbsp. vinegar
1 tsp. salt
3 c. cooked rice
1 1/2 c. sm. green grapes
1 1/2 c. sliced celery
13 1/2 oz. can pineapple tidbits
11 oz. can mandarin oranges
1 c. toasted almonds, slivered
1 1/2 c. mayonnaise

Cut chicken in chunks and mix with salad oil, orange juice, vinegar and salt. Let stand while preparing other ingredients or refrigerate overnight. Gently toss all together. Serve on lettuce. Serves 12.
