SPICY EGG CASSEROLE 
6 eggs
1/2 c. flour
1 tsp. baking powder
1 c. milk
1 (3 oz.) cream cheese
1 sm. container cottage cheese
10 oz. Monterey Jack cheese, grated
6 oz. cheddar cheese, grated
6 oz. Mozzarella cheese, grated
1 lb. hot and spicy sausage
1/8 tsp. salt
1 bunch green onions, chopped
2 (6 oz.) cans sliced and drained mushrooms
6 tbsp. butter

Brown sausage and onion together. Drain. Beat eggs in large bowl. Add flour, baking powder, milk, and salt. Then add chopped cream cheese and cottage cheese. Mix and add rest of cheese. Add sausage, mushrooms, and green onions.

Butter 9 x 13 pan. Pour mixture into pan and dot with butter. Refrigerate overnight. Let reach room temperature, then cook in 350 degree oven for 45 minutes.
