EASY COCONUT PIES | |
1 1/2 c. sugar 5 eggs 1 1/4 lb. soft butter 3/4 c. buttermilk 1 (14 oz.) pkg. flaked coconut 1/8 tsp. salt 1 tbsp. vanilla 2 prepared pie crusts To insure crisp pie crust, place in oven approximately 3 minutes before filling. Place all ingredients in mixing bowl. Mix by hand or mixer. Pour into crusts. Bake in 350 degree oven until golden brown (approximately 40 minutes). |
