CHICKEN STRATA 
6 slices day old bread
2 c. cubed chicken, precooked
1/2 c. chopped onion
1/2 c. chopped celery
1/4 c. chopped green pepper
1/2 c. mayonnaise
3/4 tsp. salt
Dash of pepper
2 slightly beaten eggs
1 1/2 c. milk
1 can cream of mushroom soup
1/2 c. shredded cheese

Lightly butter and cube bread. Put half of bread in bottom of 8 x 8 x 2 inch baking dish. Combine chicken, vegetables, mayonnaise and seasoning. Spoon over bread cubes. Sprinkle remaining bread cubes over chicken mix. Combine eggs and milk. Pour over chicken mixture. Cover and chill 1 hour. Spoon soup over top. Bake at 325 degrees for 60 minutes or until set. Sprinkle cheese over top for last few minutes of baking. Let stand before serving (about 6 servings). This reheats very well.
