SUGARLESS APPLE RAISIN COOKIES 
3 c. rolled oats
1 c. whole wheat pastry flour
1 tbsp. plus 1 tsp. cinnamon
2 tsp. baking soda
1/4 tsp. nutmeg
2/3 c. frozen apple juice concentrate
1/4 c. water
2 tbsp. vanilla extract
1 c. grated apples
3/4 c. raisins
3 egg whites, beaten stiff

Combine dry ingredients in large bowl; mix well. Combine juice, water, vanilla, apples, and raisins. Stir into dry ingredients, blending well. Fold in egg whites. Drop by heaping tablespoonfuls onto non-stick cookie sheet, patting down to flatten slightly. Bake at 400 degrees for 12 minutes. Allow cookies to cool, then loosen to remove.
