FRITATTA 
1 bunch green onions (inch tops)
1 tsp. chopped parsley
1 stalk celery
7 eggs, beaten
7 tbsp. Parmesan cheese
1/4 tsp. oregano
1/4 tsp. thyme
Pinch of nutmeg
Pinch of salt and pepper
1 c. Cheddar cheese, grated
2 jars marinated artichoke hearts, drain and chop in half
1/2 c. bread crumbs

Saute in olive oil or butter first 3 ingredients; cool. Mix together next 7 ingredients. Add #1 and mix, then add artichokes and bread crumbs. Mix all together. Bake in 9 inch dish at 325 degrees for 40 minutes or until knife comes out dry - not sticky. Don't let top get too brown. Cut in squares to serve.
