STRAWBERRY MUFFINS 
1 3/4 c. flour
1/2 c. sugar
2 1/2 tsp. baking powder
Salt to taste
1 egg, beaten
3/4 c. milk
1/3 c. vegetable oil
1 tsp. vanilla
1/4 tsp. cinnamon
1 c. fresh strawberries, sliced
1/2 c. cashews, chopped, unsalted (optional)
2 tbsp. brown sugar

Preheat oven to 400 degrees. In a large bowl sifted flour, sugar, baking powder, and salt. In a smaller bowl, stir egg, milk, oil, vanilla, and cinnamon. Mix wet and dry ingredients together with a fork. do not over mix. Fold in strawberries and cashews. Pour batter into well buttered muffin tins until 3/4 full. Bake 20-25 minutes. Makes 12.
