PEACH CUSTARD WITH CITRUS SAUCE 
4 med. peaches, peeled and sliced (2 c.)
2 tbsp. sugar
1 (12 oz.) can evaporated skim milk
3 egg whites
1/4 c. flour
3 tbsp. sugar
1/2 tsp. almond extract
1/2 tsp. vanilla
Dash of salt

Spray 8 x 1 1/2 inch round baking dish with non-stick spray. In dish, combine peaches and 2 tablespoons sugar; set aside.

In blender, combine milk, egg whites, flour, 3 tablespoons sugar, almond and vanilla and salt. Blend 15 seconds. Pour over fruit. Bake at 375 degrees for 40-45 minutes. Serve with citrus sauce. Serves 8.

CITRUS SAUCE:

1/3 c. sugar
2 tsp. cornstarch
2/3 c. water
2 tbsp. orange juice
1 tbsp. lemon juice

Combine sugar and cornstarch. Stir in water. Cook and stir over medium heat until thickened. Cook 2 minutes more. Remove from heat and stir in orange juice and lemon juice.
